Freaking AUHMAZIN' Mediterranean Pita Pockets

I made these Greek pita sandwiches that were AMAZING yesterday.

What I had on hand:
  • Fresh red pepper
  • Cucumber
  • Non-fat feta cheese
  • Red onion
  • Whole wheat pita pockets
  • Cilantro Jalapeno Hummus
  • Lemon

First I really wanted ROASTED red peppers since I didn't have any meat on hand that was going to be the "meat" of my sandwich. So I was lazy and "roasted" my peppers in 4 large slices on a VERY hot skillet with a little pam. Then I waited until they were really burnt or "roasted." Put those in a bowl and microwaved that for like 2 minutes because I was trying to speed up this process. Then you cover the bowl tightly or seal the peppers in a zip-lock-bag. This step is important because the steam from the peppers will loosen the skins so you can easily rip them off.

While you are waiting for the peppers to cool you can warm up your pita breads in the warm skillet from the peppers.

Then line them with a hefty glob of hummus then I put the feta cheese on top of the hummus so it stays put. Then fill with veggies and the roasted peppy and you have an AMAZING greek sandwich Oh yes and serve with a lemon wedge :) the sandwich goes on another level with the extra lemon juice.

Things I want to add next time:



Black Olives

Kalamata olives

Pepperoncincis or banana peppers

Fresh dill


Chick Peas
